NASHI PEAR
INGREDIENTS
- 1.5 oz Kikori Whiskey
- 0.25 oz Yuzuri Liqueur
- 0.75 oz lemon juice
- 0.75 oz star anise clove syrup*
- 3 slices Asian pears "Nashi"
- 2 dashes aromatic bitters
DIRECTIONS
Muddle pear in a shaking tin. Combine all ingredients with ice and shake. Fine strain over ice into a coupe glass. Garnish with additional pears.
*To make the star anise clove syrup, combine 4 cups water, 3 cinnamon sticks, 6 star anise cloves, and the peels of 1 lemon and 1 orange in a pot. bring to a boil, then reduce the heat and simmer for 15 minutes. Strain out the solids and combine the remaining liquid (reduces by half) 1:1 with white cane sugar. stir over low heat until the sugar dissolves. Recipe yields 1 quart.
